5 minute Lime Pickled Red Onions

These 5 minute Lime Pickled Red Onions are ridiculously easy to make - just 2 ingredients. They're so versatile & get prettier as they keep!

Ingredients

  • 1 medium-sized red onion
  • 2-3 large limes

You will also need -

a glass jar with a secure lid

Instructions

  1. Slice up the red onion, very thinly.
  2. Stuff the sliced onions into a glass jar with a lid.
  3. Squeeze the limes - you need enough juice to barely cover the sliced onion inside the jar.
  4. Pour the juice over the onions.
  5. Screw on the lid and give it a good shake to be sure that all the slices are submerged in the citrus juice.
  6. Leave in the fridge overnight or for at least 4 hours.
  7. As the onions sit in the juice, their colour will intensify and in parallel, their flavour intensity will mellow.
  8. Store in the fridge for up to two weeks.

Notes

  • You can replace limes with lemons if that's what you have available - or indeed mix the two juices together.
  • You will need to adjust the number of limes depending on how juicy they are.
  • The quantity of ingredients will depend on the size of your jar and how serious your addiction is!
