Bulgur Wheat and Pepper Salad

This Bulgur Wheat and Pepper Salad is very simply dressed with soy sauce and french dressing and when combined with chopped, fresh vegetables is gorgeous.

Ingredients

  • 225g (8oz) bulgur wheat
  • ½ red pepper, finely chopped
  • ½ yellow pepper, finely chopped
  • 3 tablespoons parsley, finely chopped
  • 4 spring onions, finely chopped
  • 3 tablespoons french dressing
  • 3 tablespoons light soy sauce

Instructions

  1. Cook the bulgur wheat according to the packet instructions - mine took 15 minutes.
  2. Once cooked, drain the bulgur wheat and tip into a bowl. Add the soy sauce and french dressing while it is still warm.
  3. Allow the bulgur wheat to cool and then stir in the chopped vegetables and herbs.
