Bulgur Wheat and Pepper Salad
This Bulgur Wheat and Pepper Salad is very simply dressed with soy sauce and french dressing and when combined with chopped, fresh vegetables is gorgeous.

- 225g (8oz) bulgur wheat
- ½ red pepper, finely chopped
- ½ yellow pepper, finely chopped
- 3 tablespoons parsley, finely chopped
- 4 spring onions, finely chopped
- 3 tablespoons french dressing
- 3 tablespoons light soy sauce
- Cook the bulgur wheat according to the packet instructions - mine took 15 minutes.
- Once cooked, drain the bulgur wheat and tip into a bowl. Add the soy sauce and french dressing while it is still warm.
- Allow the bulgur wheat to cool and then stir in the chopped vegetables and herbs.
