Easy Homemade Sausage Rolls

Homemade sausage rolls are SO much better than the ones you can buy in the supermarket. Don't be discouraged by the many stages in the recipe below, it truly is an easy process but I have described each step in detail so that there's no confusion

  • 2 x 215g rolls of ready-rolled puff pastry (or a 400g block of puff pastry)
  • 400g pack of your favourite sausages (my pack contained 12 sausages and I used 10 of them)
  • a little flour for dusting
  • 1 egg, beaten

Instructions

  1. Preheat the oven to to 200°C/180°C Fan/400°F (gas mark 6) and grease 2 solid baking trays.
  2. Flour the worktop - enough to be sure that the pastry doesn't stick.
  3. Unroll a roll of the ready rolled puff pastry onto the floured worktop - my rolls of pastry were each 23 cm x 30cm. If your pastry is in a block, use about 200g of it and roll out to approximately 23cm x 30cm.
  4. Take the skins off a pack of your favourite sausages - use a sharp knife and cut a shallow slit down the length of the sausage to release the skins.
  5. Lay the sausages out on the pastry (you'll probably get two rows) with enough space on each side to roll around the sausage and overlap. I used 2.5 sausages per row. Squidge the sausages up, or stretch them out, so that you have a long, unbroken stretch of sausage meat.
  6. Use a sharp knife to cut the pastry down the middle of the sheet.
  7. Brush some beaten egg wash (or milk) along the long, right edges (it will act as the glue).
  8. Tightly roll the pastry around the first row of sausage so that the join finishes underneath.
  9. Now roll the pastry tightly around the second row of sausage, again making sure that the join finishes underneath.
  10. Use a sharp knife to cut the sausage rolls into your chosen size. Use the point of the knife to pierce a couple of steam holes in the top of each one.
  11. Transfer the sausage rolls to a greased baking tray and brush with beaten egg wash or milk.
  12. Repeat with the second roll of pastry and the remaining sausages.
  13. Bake in the oven for 25 minutes or until golden brown and cooked through.
  14. Transfer to a rack to cool.
