Everyday Stir Fry Vegetables

Less of a recipe - more of a nudge in the stir fry direction ...

Crunchy, vibrant, slightly caramelised ... an easy vegetable transformation. An everyday vegetable 'before and after'

Ingredients

  • a drizzle of oil
  • Some or all of the following vegetables -
  • onions
  • carrots
  • courgettes
  • broccolli
  • kale
  • mangetout
  • fine green beans
  • leeks
  • bean sprouts
  • mushrooms
  • peppers
  • salt and pepper
  • Additional flavourings (optional) -
  • garlic, finely chopped or
  • ginger, finely grated or
  • chilli, finely chopped
  • soy sauce (to finish)

Instructions

  1. First of all prepare your vegetables by cutting them into strips - roughly the same size as each other. To make sure that you have enough for the number of people you are feeding, separate the vegetables into portion sizes (roughly a handful) - you will soon be able to see if you have prepared enough.
  2. Drizzle a little oil into a wok and heat it until it is hot.
  3. Now throw in the vegetables (along with any additional flavourings) and toss around with a metal spoon until the vegetables are cooked to your liking. At this stage, throw in the frozen peas - they only need to warm up.
  4. Finish with a dash of soy sauce if you fancy.
