Gooey Chocolate Mug Cake

This is the ultimate quick & easy, gooey chocolate dessert. This is cosy food; this is self-care for the soul; this truly is a hug in a mug. Serves 1 and takes less than 5 minutes to make. Cook in the microwave and 'ping' you're done ...

Ingredients

Scale

30g (1/4 cup) plain flour
50g (1/4 cup) caster sugar
2 tablespoons unsweetened cocoa powder
pinch of salt
60ml (1/4 cup) milk (I used soy milk)
2 tablespoons vegetable oil (anything with no strong flavour will work - I used sunflower)
a dash of vanilla extract
1 tablespoon semi-sweet chocolate chips (or more if your hand slips!)

ice cream to serve (I'd recommend vanilla)

Instructions

  1. Add the flour, sugar, cocoa powder and salt to the mug and stir well, breaking up any lumps as you go. A fork may work better than a spoon.
  2. Add the milk, oil and vanilla to the mug and stir well until everything is well combined.
  3. Sprinkle the chocolate chips on the surface of the mixture.
  4. Place in the microwave and cook on HIGH for around 1 minute - you want the centre to remain a bit gooey and you may need to experiment to get the timing right for your own microwave. Mine is 1200 watts and 1 minute works perfectly.
  5. Serve with ice cream - vanilla seems to be the favourite for us - and eat IMMEDIATELY! 

Notes

  • Use a regular size mug (my favourite is 350ml, which leaves space for ice cream). Nothing fancy required.
  • Serve with ice cream - vanilla is recommended.
  • Eat immediately!
