Paprika Potatoes

These potatoes are little cubes of crunchy, spiced, golden deliciousness and are a popular and easy side dish.

Ingredients

  • 700g (1lb 8oz) waxy potatoes
  • a good glug of olive oil
  • a sprinkling of Paprika, or your spice of choice
  • salt and pepper

Instructions

  1. Preheat the oven to 220°C/200°C Fan/425°F (gas mark 7) and line a baking tray with baking parchment or your chosen non-stick material.
  2. Cut the potatoes into small cubes (1-1.5cm edges). There is no need to peel them.
  3. Put the cubes into a large bowl and toss with a good glug of olive oil - the aim here is to coat rather than drench.
  4. Now sprinkle with Paprika and a generous amount of salt and pepper.
  5. Spread the cubes in a single layer on the prepared baking tray and bake in the oven for 20 minutes or until golden, crunchy and cooked through.
