Pineapple and Coconut Smoothie
I love that this 'drink me any time of the day' Pineapple and Coconut Smoothie is light and fresh and slightly zingy too. It's a totally tropical taste ♡

- 1 frozen banana
- 1 large slice fresh pineapple (approx 1 cup when it's cut into chunks)
- the juice of a small lime
- 1 cup coconut water
- Blitz all the ingredients in a high speed blender or with a stick blender, adding an extra splash of coconut water if you prefer the smoothie to be a thinner consistency.
Notes
- Have all the ingredients as cold as possible before you make it - frozen banana, chilled or frozen pineapple and chilled coconut water. There's nothing worse than a tepid smoothie.
- I sometimes add a sprig of coriander to the blender for an extra level of flavour but it doesn't suit everyone.
- The smoothie will separate slightly so blitz it at the last moment and serve with a straw for stirring as well as drinking.
